With Kill Pulteney Bay I was thinking the OP would add some mild Highland character. I was wrong. I also think one issue may have been that Kilchoman has such a strong character that some serious testing and planning would need to go into finding its mate. I do like your sweet + peat idea. Maybe an extra rich Glenfarclas? What is your thinking up front. Typically I'd want a particular angle or strategy in attempting flavor combinations. It's pairing. Pairing can't be willy nilly. While the results are often hard to anticipate, the approach can be reasoned: opposites complimenting; or matching like with like. For example, a sherry bomb with something sweet and flowery. Or a dark and sweet with big peat. OP is salty sweet. That's kind of a tough match for Kilchoman's lemon peat. I think something sherried might mate well with OP.<br /><br />Anyway - I applaud your audacity and your creativity.
